If it turns out that I spend more time on your project than we agreed at the outset, then that's really my problem - not yours. That seems fair: Agreed?
The only time this doesn't work is if there are big changes to the original brief once the project is underway - but that tends to become obvious very early on in proceedings and, as the saying goes, 'it's good to talk' isn't it?
